Recipe Notes

  • FDA guidance recommends cooking fish to 145°F.
  • Oil the fish and clean grill grates to reduce sticking.
  • A grill basket or foil can help with skinless fillets.
On the side

Suggested Sides

  • Grilled corn
Sweet, lightly charred corn complements seafood and plays especially well with lime, garlic and Southwest seasoning.
  • Crisp citrus slaw
Crunch and citrus acidity brighten rich seafood and keep the plate fresh and balanced.
Wine pairing

Pour a Glass

Sauvignon Blanc or Albariño
Both bring lively acidity and citrus or mineral notes that pair naturally with seafood, herbs, lime and garlic.

Beer pairing

Crack One Open

Kölsch or Mexican lager
These beers are crisp, light and highly refreshing, letting delicate seafood and bright seasonings stay in focus.
