Original recipe
Ingredients
- 1 lb breakfast sausage
- 1 (20 oz) bag refrigerated shredded hash browns
- 1 red bell pepper, diced
- ½ yellow onion, diced
- 10 large eggs
- 1½ cups whole milk
- 1 tablespoon Minnezona House Seasoning
- 2 cups shredded cheddar cheese, divided
- 2 green onions, sliced
Directions
- Heat oven to 375°F and grease a 9×13-inch baking dish.
- Brown sausage with bell pepper and onion. Drain excess grease.
- Spread hash browns in the baking dish. Top with sausage mixture and 1½ cups cheese.
- Whisk eggs, milk and House Seasoning until smooth. Pour evenly into the dish.
- Top with remaining cheese and bake 45–50 minutes until the center is set.
- Rest 10 minutes, garnish with green onion and slice.
Recipe Notes
- The casserole can be assembled up to 12 hours ahead and refrigerated.
- Cook until the center reaches 160°F and is no longer liquid.
- Swap sausage for cooked bacon or diced ham.
