Minnezona Breakfast Egg Bake

Ingredients

  • 1 lb breakfast sausage
  • 1 (20 oz) bag refrigerated shredded hash browns
  • 1 red bell pepper, diced
  • ½ yellow onion, diced
  • 10 large eggs
  • 1½ cups whole milk
  • 1 tablespoon Minnezona House Seasoning
  • 2 cups shredded cheddar cheese, divided
  • 2 green onions, sliced

Directions

  1. Heat oven to 375°F and grease a 9×13-inch baking dish.
  2. Brown sausage with bell pepper and onion. Drain excess grease.
  3. Spread hash browns in the baking dish. Top with sausage mixture and 1½ cups cheese.
  4. Whisk eggs, milk and House Seasoning until smooth. Pour evenly into the dish.
  5. Top with remaining cheese and bake 45–50 minutes until the center is set.
  6. Rest 10 minutes, garnish with green onion and slice.

Recipe Notes

  • The casserole can be assembled up to 12 hours ahead and refrigerated.
  • Cook until the center reaches 160°F and is no longer liquid.
  • Swap sausage for cooked bacon or diced ham.
