Ingredients
- 2 lb chicken wings, split and tips removed
- 1 tablespoon aluminum-free baking powder
- 1 tablespoon Minnezona Jalapeño Garlic Seasoning
- 1 tablespoon neutral oil
- 1 tablespoon melted butter
- 1 teaspoon fresh lime juice
- 1 tablespoon chopped cilantro
Directions
- Pat the wings extremely dry with paper towels.
- Toss wings with baking powder, Jalapeño Garlic Seasoning and oil until evenly coated.
- Arrange in a single layer on a wire rack over a sheet pan.
- Cook at 425°F for 40–45 minutes, flipping once, until deeply browned and crisp. For a pellet grill, use the same temperature and cook to the same visual doneness.
- Combine melted butter and lime juice. Toss hot wings lightly with the mixture.
- Finish with cilantro and a small extra dusting of Jalapeño Garlic if desired.
Recipe Notes
- Use baking powder, not baking soda.
- For maximum crispness, leave seasoned wings uncovered in the refrigerator for 2–8 hours before cooking.
- Cook chicken to at least 165°F internal temperature. Wings are often more tender around 175–185°F.
