Original recipe

Ingredients

  • 1 lb 80/20 ground beef
  • 2 teaspoons Minnezona House Seasoning
  • 4 slices American cheese
  • 4 burger buns
  • 1 tablespoon butter
  • ¼ cup thinly sliced onion
  • ¼ cup dill pickle chips
  • 4 tablespoons burger sauce

Directions

  1. Divide beef into 4 loose balls without packing tightly.
  2. Heat a cast-iron skillet or griddle over high heat until very hot.
  3. Place beef balls on the hot surface, season with House Seasoning, and immediately smash very thin with a sturdy spatula.
  4. Cook 2–3 minutes until deeply browned and crisp at the edges. Scrape underneath, flip, and top each patty with cheese.
  5. Cook 1–2 minutes more. Butter and toast the buns on the griddle.
  6. Build each burger with sauce, patty, onion and pickles and serve immediately.

Recipe Notes

  • 80/20 beef gives the best browning and juiciness.
  • Smash only once, immediately after the beef hits the griddle.
  • A piece of parchment between the spatula and beef helps prevent sticking.
