Ingredients

  • 2 lb baby gold or red potatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon Minnezona House Seasoning
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon lemon juice

Directions

  1. Heat oven to 425°F and place a large sheet pan in the oven while it preheats.
  2. Toss potatoes with olive oil and House Seasoning.
  3. Carefully place potatoes cut-side down on the hot sheet pan in a single layer.
  4. Roast 30 minutes without moving them, then flip and roast 8–10 minutes more until tender and crisp.
  5. Toss with parsley and lemon juice and serve hot.

Recipe Notes

  • Preheating the sheet pan improves browning.
  • Do not crowd the pan; use two pans if necessary.
  • Yukon Gold potatoes cut into 1½-inch pieces also work.
