Ingredients
- 2 lb boneless skinless chicken thighs
- 2 teaspoons Minnezona Jalapeño Garlic Seasoning
- 1 (13.5 oz) can full-fat coconut milk
- ½ cup creamy peanut butter
- 3 tablespoons low-sodium soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon lime juice
- 1 tablespoon grated fresh ginger
- 2 teaspoons red curry paste
- 1 red bell pepper, sliced
- 1 cup snap peas, added near the end
- Chopped peanuts, cilantro and lime wedges, for serving
Directions
- Season chicken with Jalapeño Garlic and place in the slow cooker.
- Whisk coconut milk, peanut butter, soy sauce, brown sugar, lime juice, ginger and curry paste. Pour over chicken.
- Add bell pepper and cook on LOW 5–6 hours or HIGH 3–4 hours.
- Stir in snap peas for the final 15 minutes so they stay bright.
- Serve over jasmine rice with peanuts, cilantro and lime.
Recipe Notes
- Use Thai red curry paste to taste; brands vary in heat.
- Natural peanut butter works, but the sauce may be slightly looser.
- Do not overcook the snap peas.
