  • 3 tablespoons butter, melted
  • 2 teaspoons Minnezona Jalapeño Garlic Seasoning
  • 1 tablespoon lime juice
  • ⅓ cup crumbled cotija cheese
  • 2 tablespoons chopped cilantro
  • 1 lime, cut into wedges

Directions

  1. Preheat grill to medium-high.
  2. Grill corn 10–12 minutes, turning every few minutes, until tender with charred spots on all sides.
  3. Mix melted butter, Jalapeño Garlic Seasoning and lime juice.
  4. Brush hot corn generously with seasoned butter.
  5. Sprinkle with cotija and cilantro and serve with lime wedges.

Recipe Notes

  • Fresh sweet corn needs only enough grilling time to become tender and charred.
  • Feta can substitute for cotija.
  • Leftover kernels are excellent in salsa or taco bowls.
On the side

Suggested Sides

  • Grilled chicken
Simple grilled protein turns seasoned corn into a complete meal while letting the sweet, charred corn remain prominent.
  • Fresh tomato salad
Juicy tomatoes and acidity contrast the corn’s sweetness and add a cool fresh element to the plate.
Wine pairing

Pour a Glass

Sauvignon Blanc
Citrus acidity and herbal notes complement sweet corn, herbs and jalapeño while keeping the pairing refreshing.

Beer pairing

Crack One Open

Mexican lager
A crisp, light lager is especially good with grilled corn, lime and chile because it refreshes without masking them.
